"I love any dish with sea urchin, and this sandwich is the perfect snack at the bar with a glass of Cava or Txakoli. We get this beautiful, fresh urchin in from Maine and wanted to create a dish that was simple yet full of flavor. The miso gives the sandwich an extra umami punch, and we add pickled mustard seeds and fresh lemon juice to cut through the buttery richness."  - Ken Oringer, Chef
