How to Make the Ultimate Thanksgiving Leftover Sandwich

Sylvain Delpique may be French, but he still loves Thanksgiving. The Executive Chef of New York City’s 84-year-old speakeasy 21 Club keeps a traditional table – turkey, stuffing, cranberry sauce, sweet potatoes – and he refrigerat the leftovers in order to make a recycled masterpiece. Delpique’s post Turkey Day sandwich is all the more remarkable for including almost every holiday staple and for not involving any ingredients you’re unlikely to have around. Here’s his simple five-step process for repurposing the biggest meal of the year.


1. Lay the ground work with turkey and a thin layer of mustard, then top it with sausage from stuffing scraps to add spice.


2. Prepare a gritty cranberry mostarda with apple cider vinegar and mustard seeds. Smear on the other slice of bread.


3. Stack on a few slices of Swiss cheese (cheese makes everything better).


4. Pile on mixed greens with tomatoes.


5. Put the sandwich together and press. When the cheese begins to ooze, the Panini is done.
