High-Class Hero Recipe

Smoked Prime Rib Sandwich, Pickled Green Tomato, Salsas Bianco and Rosso

Serves 3 heroes

1ea bone in prime grade short rib (approx 24oz ea)
¼ cup course ground coriander seed
¼ cup course ground black pepper
¼ cup kosher salt
3 Tbs butter
3 large sprigs of thyme
3 cloves crushed garlic

Rub the short rib with the salt, coriander and black pepper liberally. Then sear or grill the rib to form a dark crust. Then wrap it very tight in plastic wrap with the butter, thyme and garlic. Place in a pot of water at 150 degrees F. Cook for 8 hours holding that constant temperature. At this point unwrap the rib and pat dry with paper towels. Then re-grill or sear the meat one last time before slicing off the bone.

1 Cup Sour Cream
3 Tbs Grated Fresh Horseradish
1 tsp salt
1 tsp black pepper
Tbs Finely minced chives

Mix all ingredients in a bowl.

1 Cup Roasted Red Peppers Chopped finely
2 Tbs Red wine vinegar
1Tbs Olive Oil
1 clove of garlic, raw finely chopped

Mix all ingredients in a bowl.

To Assemble Sandwich:
The bread is a sesame seeded Semolina Bread from Parisi Bakery. We lightly toast the bread and shmear one side with the salsa rosso. Then mix the salsa bianco with finely shaved cabbage to create a horseradish cole slaw. Slice your rib steaks thinly and place the slices atop the red sauce. Top that with your slaw and finish the whole thing with sliced pickled green tomatoes.
