Cut peppers in half, remove seeds, and slice into half-inch strips. Cut onion in quarters and slice.Place peppers and onions in aluminum pan, add two tablespoons of olive oil and salt and pepper to taste. Mix ingredients and place on one side of the grill on medium heat and cover with foil. Season chicken and grill. Once chicken is cooked, remove from grill and cut into strips.
