“It was an inspiration from a long time ago. I love mushrooms so mushrooms HAD to be in the sandwich. The piave cheese comes from very close to where I am from, the Piave river is near my house. I added speck because I love the smoky flavor and it also comes from where I am from – the Veneto area. The arugula gives the green feeling and The Walter sandwich pairs well with a nice red wine.”” – Walter Momente, Chef
